Lemon-Ginger Honey Lemonade

Preparation

Wash the lemons in warm water, dry them, and slice off a few thin slices for garnish.

Halve the remaining lemons, squeeze the juice, and strain it through a fine sieve into a pitcher.
TIP:First, gently press the lemon to release the juice more easily. Cut it in half and squeeze the juice using a juicer or a handheld press. Strain through a fine sieve so that only clear juice remains, with no pulp or seeds.
Ginger Syrup

Peel the ginger and cut it into thin slices so it releases flavor more quickly.
TIP:Use the back of the spoon to gently scrape off the thin skin from the ginger. The ginger flesh stays intact and the flavor remains full, and the process is faster than peeling with a knife.

Pour 250 ml of water into a saucepan, add the ginger slices, and bring to a boil.

Reduce to a gentle simmer and cook for 5 minutes, then remove from heat and let steep for 5 minutes.

Strain the syrup through a fine sieve and, while still warm, stir in the honey until completely dissolved.
Mixing

Pour the ginger syrup and the remaining water into the strained lemon juice in the pitcher.

Stir well, taste, and adjust the ratio of juice to water if needed.

Add a few handfuls of ice to the pitcher if serving immediately, and stir briefly again.
Serving

Pour the lemonade into glasses filled with ice cubes and garnish with a lemon slice or a thin slice of ginger.

More tips:
For a sparkling version, replace part of the water with sparkling water and add it just before serving.
Make the syrup in double quantity ahead of time and store it in the refrigerator for up to 1 week.
