Preparation

Peel the ginger with a spoon and finely grate it on a cutting board.
TIP:Peel ginger using the edge of a spoon instead of a knife, it’s a safer and gentler way to remove the thin skin without losing any flesh. This method also works for other delicate roots.

Wash the lemons, cut them in half, and squeeze out the juice using a citrus juicer. remove any seeds.

Measure out the water and sugar, and prepare a pot, sieve, and bowl for straining.
Cooking

Place the grated ginger in a pot, add sugar and 300 ml water, and bring to a boil.
TIP:Prepare the syrup by boiling water with sugar and adding fruit, herbs, or spices. After a short steeping, strain through a fine sieve. This simple method can be used for various homemade syrups.

Reduce the heat and simmer for 10 minutes, then remove from heat and let steep for 10 minutes.

Strain the syrup through a fine sieve into a bowl, pressing the ginger well with a spoon.
TIP:When straining, use a fine sieve and gently press the solid parts with a spoon or spatula to extract as much flavor as possible. This method is suitable for sauces, broths, and syrups.

In a pitcher, mix the ginger syrup with lemon juice and one liter of cold water, taste, and adjust the ratio.
Serving

Fill glasses with ice and pour over the ginger lemonade from the prepared pitcher.

More tips:
Store ginger syrup in a sealed bottle in the refrigerator for up to one week. You can double the batch for later use.
For a sparkling version, substitute part of the water with sparkling water when serving.
