Step by step process

Preparation

    Thoroughly wash and dry the lemons. Slice one into thin rounds for garnish.

    Halve the remaining lemons and squeeze the juice through a fine sieve into a bowl to catch the seeds.

    Rinse the mint under cold water and pat dry. Reserve a few nice leaves for the final garnish.

Mixing

    Put the cane sugar into a carafe and pour in the squeezed lemon juice. Stir vigorously with a spoon until most of the sugar has dissolved.

    TIP: 

    To keep your lemonade sweet without crystals, make a simple syrup: mix 1 part sugar with 1 part water, heat and stir until the sugar dissolves. Let it cool and add it to the carafe.

    Add whole sprigs of mint and gently rub them against the carafe walls with a spoon to release the oils. do not crush them into pulp.

    Pour in the cold water, add most of the ice, and mix well. Adjust sweetness or acidity by adding more sugar or water to taste.

    Chill the lemonade in the fridge for about 10 minutes to let the flavors meld.

Serving

    Place a few ice cubes and a lemon slice into 4 glasses. Pour in the chilled lemonade, garnish with mint leaves, and serve immediately.
