Watermelon Slush
Ingredients

Preparation

Remove the rind and seeds from the watermelon, cut it into small cubes, and place them in a bowl.

Juice the limes with a citrus juicer to yield about 60 ml of juice. Measure the simple syrup and prepare the ice.
Blending

Add half of the ice and half of the watermelon to a blender, add part of the lime juice and syrup, and blend until a fine icy slush forms.
TIP:Prepare two batches: first blend half the watermelon, ice, juice, and syrup, then add the remaining ingredients. This distributes the load and yields a smoother texture without overloading the blender.

Add the remaining ingredients and pulse briefly. Adjust sweetness or acidity, and for a thicker texture, add a little more ice.
Serving

Divide the slush among 4 chilled glasses. Garnish with mint leaves and a lime slice.

Serve immediately while the drink is icy and fluffy.
More tips:
For a more intense flavor and less dilution, use pre-frozen watermelon cubes instead of some of the ice.
