This classic Greek salad is built on ripe tomatoes, crisp cucumber, salty feta, and good-quality olive oil. Traditionally, it is only lightly tossed, the vegetables are cut into larger pieces, and the feta is placed on top in one whole slab. It works well as a light lunch, dinner, or a refreshing starter on hot days.

Preparation

    Cut the tomatoes into large wedges, the cucumber into thicker half-moons, and the green pepper into wider strips.

    Peel the red onion, cut it in half, and slice it into thin half-moons so it does not taste too sharp in the salad.

    TIP: 

    Soak sliced onion in cold water for 5 to 10 minutes, or briefly in water with a little vinegar. This reduces its sharpness while keeping it crisp, making it perfect for salads and other cold dishes.

    Place all the vegetables in a bowl, add the Kalamata olives, season lightly with salt and pepper, and drizzle with wine vinegar and olive oil.

    Toss the salad very gently, place the block of feta on top, sprinkle it with oregano, and serve immediately so the vegetables stay fresh and crisp.

More tips:

Do not crumble the feta into the salad in advance. traditionally, it is served on top in one larger piece.

Salt the tomatoes only just before serving so they do not release too much liquid and water down the salad.
