Menemen, Turkish scrambled eggs with tomatoes and feta

Menemen is a Turkish scramble of eggs simmered right in a thick sauce of tomatoes, green pepper and onion. The eggs are set in the bubbling sauce only briefly and stirred gently, so they stay soft and creamy rather than fried dry. It is served straight from the pan, topped with crumbled feta and parsley, with fresh bread for scooping. In Turkey it is one of the most popular breakfasts and even a complete beginner can make it in minutes.

Step by step process

Preparing the Sauce

    The base of menemen is aromatic vegetables. Heat the olive oil in a pan over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened. Add the diced green pepper and cook for another 3 minutes.

    Add the diced tomatoes, season with salt, pepper and paprika. Cook for 6-8 minutes over low heat until the tomatoes break down and form a thick sauce.

Eggs and Serving

    Reduce the heat to low. Add the cracked eggs to the sauce, do not stir immediately, let them set for a moment. Then gently fold them into the sauce with a fork to create soft scrambled eggs.

    Remove from heat, sprinkle with crumbled feta cheese and cover for 1-2 minutes. Garnish with chopped parsley before serving and serve directly from the pan with fresh bread.

More tips:

Add the eggs over low heat and stir only briefly, or they turn tough and dry.

Cook the tomatoes down to a thick sauce, a watery base just thins the eggs.
