Preparing the Sauce

The base of menemen is aromatic vegetables. Heat the olive oil in a pan over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened. Add the diced green pepper and cook for another 3 minutes.

Add the diced tomatoes, season with salt, pepper and paprika. Cook for 6-8 minutes over low heat until the tomatoes break down and form a thick sauce.
Eggs and Serving

Reduce the heat to low. Add the cracked eggs to the sauce, do not stir immediately, let them set for a moment. Then gently fold them into the sauce with a fork to create soft scrambled eggs.

Remove from heat, sprinkle with crumbled feta cheese and cover for 1-2 minutes. Garnish with chopped parsley before serving and serve directly from the pan with fresh bread.
More tips:
Add the eggs over low heat and stir only briefly, or they turn tough and dry.
Cook the tomatoes down to a thick sauce, a watery base just thins the eggs.
