Dice the tomatoes into small cubes so they break down quickly in the pan and create a juicy base.

Remove the seeds from the green peppers and finely chop them. Crack the eggs into a bowl and lightly whisk them with a fork.

Melt the butter in a wide pan, add the peppers, and cook over medium heat for about 4 minutes until softened.

Stir in the tomatoes, season with salt and pepper, and cook the mixture for 6 to 8 minutes until it releases its juices and thickens slightly.

Pour the eggs into the tomato mixture, fold them in with a few slow strokes, and let them set briefly so they stay creamy.
TIP:Pour the eggs into a hot, but not overheated, pan and stir them slowly with just a few strokes. Thanks to this gentle preparation, they will stay soft, creamy, and will not dry out or curdle.

Warm the pita briefly in a dry pan or in the oven so it softens and is pleasantly warm for serving.

Divide the finished menemen onto plates, sprinkle with parsley, and serve immediately with warm pita for dipping.
More tips:
Do not overcook the eggs in the pan, because proper menemen should remain tender, juicy, and lightly creamy.
If the tomatoes are not sweet enough and are too watery, let them cook off for 1 minute longer before adding the eggs.
