Preparation

Choose good-quality plain yogurt (preferably Turkish or Greek) and pour it into a blender. Add cold water in a 1:1 ratio, half a teaspoon of salt and a handful of fresh mint leaves, these ingredients make an authentic ayran.

Blend for 20-30 seconds until smooth. The drink will froth lightly and the characteristic white middle layer forms thanks to energetic incorporation of air into the yogurt base. A properly made drink has a smooth creamy texture and a fresh herbal aroma.
Chilling

Do not heat or boil. Transfer the finished drink immediately to the fridge and chill for 10-15 minutes, the flavours will blend and the middle layer will settle into its typical consistency.
Serving

Pour into a carafe, divide into 4 glasses and season with salt to taste. Serve immediately, the drink is best within 30 minutes of mixing, as the middle layer sediments over time.
More tips:
Adjust thickness with the amount of water: for a lighter ayran increase water to a 1:2 ratio, for a creamier version reduce it.
If you only have dried mint, use a pinch and let the drink rest for 5 minutes so the herb releases its aroma.
