Turkish grilled köfte with vegetables

Köfte are juicy logs of ground lamb, kneaded with onion, garlic and spices and grilled until golden right over the fire. Cumin, paprika and fresh parsley give them the signature aroma of Middle Eastern cooking, lifted by a pinch of chili and lemon. They are grilled on skewers next to zucchini, peppers and cherry tomatoes, so the meat soaks up the smoke and the vegetables caramelize. They are served hot with white yogurt, mint and flatbread, as a summer meal straight from the grill.

Step by step process

Preparing the köfte

    Köfte start with carefully seasoning the meat. In a bowl, mix the ground lamb with finely chopped onion, pressed garlic, parsley, paprika, cumin, salt and pepper. Add the breadcrumbs and knead by hand into a smooth, firm mixture.

    Shape the mixture into elongated oval logs, about 8-10 pieces. Thread them onto soaked wooden or metal skewers, 2-3 per skewer. Chill for 20 minutes so the shape sets well.

    Cut the zucchini, red pepper and red onion into pieces (about 3 cm). Thread onto separate skewers, alternating with cherry tomatoes. Brush the vegetables with olive oil and season with salt.

Grilling and serving

    Heat a grill or grill pan to high and brush lightly with oil. Grill the meat skewers for 3-4 minutes per side, until browned and cooked through (internal temperature at least 70 °C).

    Grill the vegetable skewers next to the köfte for 2-3 minutes per side, until the vegetables soften and lightly char at the edges. Serve at once with white yogurt, mint leaves and a lemon wedge.

More tips:

Chill the meat before grilling so the skewers hold their shape better.

Grill over high heat and turn the skewers rarely so the köfte do not fall apart.
