Turkish grilled köfte with vegetables

Step by step process
Preparing the köfte

Köfte start with carefully seasoning the meat. In a bowl, mix the ground lamb with finely chopped onion, pressed garlic, parsley, paprika, cumin, salt and pepper. Add the breadcrumbs and knead by hand into a smooth, firm mixture.

Shape the mixture into elongated oval logs, about 8-10 pieces. Thread them onto soaked wooden or metal skewers, 2-3 per skewer. Chill for 20 minutes so the shape sets well.

Cut the zucchini, red pepper and red onion into pieces (about 3 cm). Thread onto separate skewers, alternating with cherry tomatoes. Brush the vegetables with olive oil and season with salt.
Grilling and serving

Heat a grill or grill pan to high and brush lightly with oil. Grill the meat skewers for 3-4 minutes per side, until browned and cooked through (internal temperature at least 70 °C).

Grill the vegetable skewers next to the köfte for 2-3 minutes per side, until the vegetables soften and lightly char at the edges. Serve at once with white yogurt, mint leaves and a lemon wedge.
More tips:
Chill the meat before grilling so the skewers hold their shape better.
Grill over high heat and turn the skewers rarely so the köfte do not fall apart.
