Cacik, Turkish yogurt dip with cucumber and mint

Preparing the cucumber

Cacik starts with the cucumber: peel and grate the cucumber on a coarse grater or cut into small cubes. Transfer to a sieve, salt lightly and let drain for 5-10 minutes so the yogurt stays thick and does not release water.
Mixing

In a larger bowl, combine the yogurt with the crushed garlic. Add the drained cucumber, chopped fresh mint leaves and olive oil. Mix everything well and season with salt. Cover and refrigerate for at least 30 minutes to let the flavours meld.
Serving

Transfer the chilled dip to a bowl and drizzle with a little olive oil. Garnish with fresh mint leaves. Serve cacik as a dip with pita bread, fresh vegetables or as a side dish to grilled meat. Keeps in the fridge for up to 2 days.
More tips:
Salt and drain the cucumber before mixing, or the dip turns runny within an hour.
Use thick Greek yogurt, plain white yogurt would be too watery for a dip.
