Cucumber Infused Water with Lemon and Mint

Prepare the ingredients

Wash the cucumber and slice it as thinly as possible on a cutting board. Use a peeler if you like, so it releases its fresh flavor quickly. Wash the lemon well in warm water, pat it dry and slice it into thin rounds with the peel on. For a milder, less bitter taste, cut away half of the peel in advance. That keeps the drink from turning bitter.

Rinse the mint sprigs and gently bruise them between your palms. The leaves relax and release their oils, which make the drink more fragrant. Do not tear the mint into small pieces, so you can strain it out easily later and no tiny leaves are left behind.
Layering and steeping

In a large carafe, layer the cucumber slices, lemon rounds and mint sprigs alternately. This way the flavors spread evenly through the whole height of the container. Press the mint gently against the bottom with a wooden spoon or the back of a spoon so it releases as much aroma as possible into the cold water.

Pour cold water over the layers, add a handful of ice and place the container in the fridge for at least 30 minutes. The longer the mixture steeps, the fuller the flavor you get. Ideally let it rest for two to three hours. Before serving, stir gently and pour through a strainer. Feel free to top the carafe up with fresh water during the day for a second batch.
More tips:
You can easily vary the flavor. Instead of lemon, try lime or orange, and add a slice of ginger or a few berries to the mint. In a thermos with a lid, the water stays cold on the go and at a picnic.
