Step by step process
Preparing the citrus

Wash the orange, lime, and lemon well in warm water and pat them dry, because they go into the citrus water with the peel on. On a board, slice them into thin rounds so the cold water can draw out as much juice and aroma as possible. Keep the slices thin. The finer they are, the faster the flavor of orange, lime, and lemon releases into the cold water.

If you prefer a milder, less bitter taste, trim the white pith under the peel from half of the slices first. That pith is what gives the drink its bitter note. By adjusting the amount of peel, you can easily dial in how bold the result should be.
Layering and steeping

In a large carafe, layer rounds of orange, lime, and lemon in alternating order so the flavors spread evenly through the whole height of the vessel. Press the bottom layer gently with the back of a spoon so the citrus starts releasing juice into the cold water right away.

Pour cold water over the layers, add two handfuls of ice, and chill the carafe in the fridge for at least 30 minutes. The longer the mixture steeps, the fuller the flavor you get, with two to three hours being ideal. The chilled carafe beads pleasantly with condensation. Before serving, just stir the drink gently and pour it through a strainer. During the day you can top it up again with fresh water for a second infusion.

You can easily vary the taste to suit your mood: add a sprig of mint or rosemary, a slice of ginger, or a few berries to the citrus. In a lidded thermos, citrus water stays cold on the go, at a picnic, and by the grill.
