Finely chop the dark chocolate and finely grate the zest from a well-washed orange, avoiding the white pith.

Squeeze 2 tablespoons of juice from the orange and have the remaining ingredients ready by the stove.

In a saucepan, slowly heat the milk with the cream, sugar, vanilla sugar, and half of the orange zest until just below boiling point.
TIP:Heat milk or cream slowly over low heat, keeping it just below the boiling point. As soon as steam and tiny bubbles appear around the edges, lower the heat or remove it from the stove. It will stay smooth and won’t scorch.

Add the chopped chocolate, let it melt, and whisk until smooth and thick, with no lumps.
TIP:Add the chocolate to a hot, but not boiling, liquid and let it sit briefly. Then gently stir from the center with a whisk or spatula until it forms a smooth emulsion, so it doesn’t seize, form lumps, or lose its shine.

Finally, stir in the orange juice, warm through briefly, and do not let the chocolate boil vigorously any further.
Serving

Divide the hot chocolate among four mugs and finish each serving with the remaining finely grated orange zest.
More tips:
Use an unwaxed orange, as the zest is a key flavor component in this recipe.
If the chocolate thickens too much after standing, loosen it with a small amount of hot milk while reheating.
