Peach, Lemon and Mint Iced Tea

This iced tea with mint is the drink you reach for first on a scorching afternoon. You simmer ripe peaches with a little cane sugar until they turn syrupy, then steep them with black tea and fresh mint. Cold water brings the temperature down fast. Lemon adds a bright edge, and peach slices round out the fruit. Chill it well, pour it over ice, and you have a homemade cooler that beats anything from a bottle.

    Peach and mint iced tea starts with the fruit. Wash the peaches. Slice one into thin wedges for later, and cut the other two into small cubes. Set out the mint, lemon, pitcher, and strainer.

    Pour 700 ml of water into a saucepan. Add the diced peaches and cane sugar, then bring it to a boil. Lower the heat. Simmer for about 5 minutes, until the peaches soften and release their juice.

    Take the saucepan off the heat. Add the black tea bags and half of the mint. Cover and steep for exactly 5 minutes, so the tea stays full-flavored but never bitter.

    TIP: 

    Black tea should usually be steeped for 3 to 5 minutes, depending on the desired strength. A longer steeping time releases more tannins, so the tea can become bitter and astringent. For a base used in cold drinks, it is better to stick to an exact steeping time.

    Strain the base through a strainer into a pitcher. Press the peaches gently with a spoon and return the liquid to the drink. Pour in the remaining 500 ml of cold water. Squeeze in the lemon, add the peach slices, and chill for at least 1 hour.

Serving

    Divide the ice among the glasses. Pour in the chilled tea, then top it with the rest of the mint just before serving. That keeps it fresh and aromatic.

More tips:

Do not let the tea bags steep longer than 5 minutes, or the drink may turn bitter.

For a stronger peach flavor, blend some of the cooked peaches and stir them back in after straining.
