Peach, Lemon and Mint Iced Tea

Wash the peaches, slice one into thin wedges for later flavoring, and cut the remaining two into small cubes. Also prepare the mint, lemon, pitcher, and strainer so the next steps flow smoothly.

Pour 700 ml of water into a saucepan, add the diced peaches and brown sugar, and bring the mixture to a boil. Then simmer gently for about 5 minutes, until the peaches soften and release more juice into the water.

Remove the saucepan from the heat, add the black tea bags and half of the mint, cover, and let steep for exactly 5 minutes so the tea stays full-flavored without turning bitter.
TIP:Black tea should usually be steeped for 3 to 5 minutes, depending on the desired strength. A longer steeping time releases more tannins, so the tea can become bitter and astringent. For a base used in cold drinks, it is better to stick to an exact steeping time.

Strain the finished base through a strainer into a pitcher, gently press the peaches in the strainer with a spoon, and return the collected liquid to the drink. Pour in the remaining 500 ml of cold water, squeeze in the lemon juice, add the peach slices, and chill well for at least 1 hour.
Serving

Divide ice among the glasses, pour in the chilled iced tea, and top with the remaining mint just before serving so it stays fresh and aromatic.
More tips:
Do not let the tea bags steep for longer than 5 minutes, or the drink may turn bitter.
If you want a stronger peach flavor, blend some of the cooked peaches and return them to the tea after straining.
