Peach and Vanilla Iced Tea

Peach and vanilla iced tea is a cooling black tea scented with a real vanilla pod and softened with slices of sweet peaches. Cane sugar and a squeeze of lemon juice balance the flavor. The tea steeps for just five minutes, then rests in the refrigerator for one to two hours so the flavors can meld. Serve it over ice cubes with mint leaves as the ideal pitcher drink for hot summer days.

Step by step process

Preparing the ingredients

    Wash the peaches, remove the pits, and slice thinly. This step is key to great peach and vanilla iced tea, as freshly cut fruit releases its juice into the drink during chilling.

    Split the vanilla pod lengthwise and scrape out the seeds with a sharp knife.

    TIP: 

    Split the vanilla bean and scrape out the seeds. Place the seeds and the remaining pod into hot liquid and briefly warm it, then remove the pod. This will give a more pronounced aroma and flavor than a plain infusion.

    Prepare a pitcher or jug, measure out 1 liter of water, and have the tea bags, cane sugar and lemon juice ready to go.

Brewing and chilling

    Bring the water to a boil in a kettle and pour it over the tea bags in a heatproof glass container or jug. The water must be fully boiling, or the tea will not steep properly.

    Let the tea steep for approximately 5 minutes, then remove and discard the tea bags.

    Stir in the cane sugar, the vanilla seeds and the empty vanilla pod, stirring until the sugar dissolves completely.

    Add the peach slices and lemon juice. Let cool to room temperature, then cover and chill in the refrigerator for 1 to 2 hours so the flavors meld into a well-balanced drink.

Serving

    Remove the vanilla pod from the drink and, if desired, leave a few peach slices for garnish.

    Fill the pitcher or glasses with ice cubes and pour in the chilled tea.

    Garnish with mint leaves and serve immediately, well chilled.

More tips:

Prefer a stronger tea? Use 5 bags or extend steeping by 1 minute, but no longer to avoid bitterness.

No vanilla pod? Add 0.5 teaspoon of vanilla extract to the cooled tea and the result will be almost the same.
