Step by step process

Preparation

    Wash the peaches, remove the pits, and slice thinly.

    Split the vanilla pod lengthwise and scrape out the seeds with a sharp knife.

    TIP: 

    Split the vanilla bean and scrape out the seeds. Place the seeds and the remaining pod into hot liquid and briefly warm it, then remove the pod. This will give a more pronounced aroma and flavor than a plain infusion.

    Prepare a pitcher, measure the water, and have the tea bags and sugar ready.

Brewing

    Bring the water to a boil in a kettle and pour it over the tea bags in a heatproof container.

    Let steep for approximately 5 minutes, then remove and discard the tea bags.

    Stir in the cane sugar, the vanilla seeds, and the empty vanilla pod, stirring until the sugar dissolves.

    Add the peach slices and lemon juice, let cool to room temperature, then cover and chill in the refrigerator for 1-2 hours to allow the flavors to meld.

Serving

    Remove the vanilla pod from the drink and, if desired, leave a few peach slices for garnish.

    Fill the pitcher or glasses with ice cubes and pour in the chilled tea with peaches.

    Garnish with mint leaves and serve immediately, well chilled.

More tips:

Prefer a stronger tea? Use 5 bags or extend steeping by 1 minute, but no longer to avoid bitterness.

No vanilla pod? Add 0.5 teaspoon of vanilla extract to the cooled tea.
