Peach Iced Tea

Homemade peach iced tea with mint is a light, fragrant, and pleasantly refreshing drink for hot days. Black tea is rounded out by briefly simmered peaches, which give it natural sweetness and a full fruity flavor. In the American style you sweeten it with white sugar and never dilute it with cold water, so it keeps a bold taste. Serve it really well chilled, with plenty of ice and lemon slices.

Step by step process

Tea Base

    Wash and pit the peaches, then slice half a lemon into thin rounds. Set them aside for this iced tea.

    Pour the water into a saucepan and add the peaches, sugar, and half of the mint. Bring to a boil and simmer gently for about 5 minutes.

    Take the saucepan off the heat. Add the black tea bags and let them steep for 4 to 5 minutes, until the drink is full-flavored but not bitter.

    Strain the tea through a sieve into a larger jug. Add the lemon juice from the other half and let the drink cool completely.

    Chill the cooled tea in the fridge for at least 1 hour. The rest lets the flavors meld and the drink turn truly refreshing.

Serving

    Cut the remaining peach into thin wedges. Divide it, along with the lemon slices, among glasses filled with ice.

    Fill the glasses with the well-chilled tea and garnish with fresh mint. Serve right away, while the drink is ice cold.

More tips:

For a milder, fruitier flavor, let the peaches cool in the tea 10 minutes longer, then strain the drink.

You can swap some sugar for honey, but stir it into warm, not boiling, tea to keep its flavor.
