Peach clafoutis is a French baked dessert where ripe peaches float in a delicate pourable batter of eggs, milk, and vanilla. It bakes to a golden finish in a single baking dish and gets a dusting of powdered sugar on top. A creamy center and tender fruit make it an honest summer dessert. It is served lukewarm, straight from the dish.

Step by step process

Preparing the peaches and dish

    For the peach clafoutis, first grease a baking dish with melted butter and coat it with a thin layer of sugar so the batter will not stick. Preheat the oven to 180 degrees Celsius.

    Wash the peaches, halve them, remove the pits, and slice them about half a centimeter thick. Spread the slices evenly over the bottom of the greased dish.

Batter and baking

    In a bowl, whisk the eggs with the sugar and vanilla sugar until smooth. Add a pinch of salt and the sifted flour, then gradually stir in the milk and cream until you have a thin pourable batter with no lumps.

    Carefully pour the batter over the peaches so they are covered. Bake for 40 minutes, until the top turns golden and the center sets.

    Let the finished clafoutis cool for about 15 minutes, then dust it with powdered sugar through a sieve and serve it lukewarm straight from the dish.

More tips:

You can sprinkle the peaches with a little lemon juice before baking so the clafoutis is not too sweet.
