Cucumber Gin Fizz

Preparation

Wash the cucumber. Peel a few thin lengthwise slices for garnish and grate the rest finely.

Place the grated cucumber into a sieve over a bowl and press it with a spoon. Measure about 80 ml of cucumber juice.
TIP:Press the juice through a sieve using a spoon. For a higher yield, wrap the grated cucumber in a clean cloth and squeeze over a bowl until only the juice remains.
Mixing

Pour gin, lemon juice, simple syrup, and cucumber juice into a mixing bowl. Stir well with a bar spoon or whisk.

Divide ice among 4 tall glasses, 4 ice cubes each, and pour the mixed base into them.
Serving

Top each glass with about 100 ml of soda water and gently stir once.

Garnish with a cucumber slice and a mint leaf. Serve immediately chilled.
More tips:
For a more pronounced cucumber aroma, purée the cucumber with part of the simple syrup and strain the mixture through a fine sieve. Chill the glasses and the soda beforehand.
