Rinse the berries under cold water, pat them dry with a paper towel, and slice or cut into smaller pieces. This refreshing cocktail comes together in just 10 minutes, making it the ideal quick drink for any warm-weather gathering. It keeps well on ice throughout a summer party without losing its gorgeous pink colour.

Halve the limes, use a citrus juicer to squeeze the juice into a small bowl, and remove any seeds. Freshly squeezed lime juice adds a pleasant tartness and beautifully highlights the fruity flavour of the whole drink. If you do not have limes on hand, fresh lemon juice works well too and gives a slightly bolder citrus note.
Mixing

Divide the sliced fruit among 4 tall glasses and lightly muddle with a spoon or muddler to release the juices and give the cocktail its vibrant pink colour. Press just enough to bruise them - not so hard that they turn to mush. You want some fruit pieces remaining in the glass.

Add about 6 ice cubes to each glass, measure out 50 ml of spirit and pour it slowly over the muddled fruit and its juice. The ice quickly chills all the ingredients so the drink is immediately ready to enjoy. Use large ice cubes if you have them, as they melt more slowly and keep the cocktail cold without diluting it too fast.

Add about 1 tbsp of freshly squeezed lime juice to each glass to taste, stir briefly and sample. Add a little more lime juice if you prefer extra tartness.

Top up with chilled sparkling mixer (about 150 ml per glass) and stir very gently using a long bar spoon, lifting from the bottom upward, to preserve as many bubbles as possible and maintain the beautiful layered look.
Serving

Garnish with a fresh berry slice hung on the rim or a lime wheel, add a straw, and serve immediately while well chilled. The sooner you serve it, the more bubbles you will enjoy and the more refreshing the cocktail will taste.
More tips:
Chill the tonic and the glasses beforehand, the drink will be fresher and the bubbles will last longer.
