Step by step process
Preparing the Glasses

Thoroughly wash the limes under warm water and dry them with a clean towel to remove any wax from the skin.

Cut each lime into quarters and place the quarters of one lime into each of the four tall glasses.
Muddling the Mint Base

Add 2 teaspoons of cane sugar and 2 sprigs of fresh mint, stripped of their leaves, into each glass.

Using a muddler or a sturdy spoon, gently muddle the limes with the sugar and mint to release the essential oils from the mint leaves and combine the lime juice with the sugar. Do not crush the mint too hard or it will become bitter.
TIP:Press limes firmly (3-4 times), but muddle mint gently only 2-3 times. Too aggressive crushing extracts bitter chlorophyll that spoils the aroma. Maximum 10 seconds.
Finishing and Serving

Fill the glasses three-quarters full with crushed ice to keep the drink cold for longer without diluting it too quickly.

Pour chilled sparkling water almost to the rim and gently stir with a long spoon to dissolve the sugar from the bottom throughout the entire drink.

Garnish with a sprig of fresh mint and a lime wheel notched onto the rim of the glass, and serve immediately with a straw.
More tips:
Instead of white cane sugar, you can use ready-made simple syrup (1 tablespoon per glass) - it dissolves more evenly and gives the drink a smoother taste.
For a more pronounced citrus flavor, add a few extra drops of lime juice to each glass before topping with soda, or slip in a slice of fresh cucumber for an interesting herbal twist.
