Step by step process

Preparing the Glasses and Ingredients

    Chilled glasses are essential. Place two tall hurricane or tiki glasses in the freezer so the Zombie cocktail is served truly ice-cold.

    Squeeze the juice from fresh limes and grapefruit using a citrus juicer. Strain through a fine-mesh sieve to remove any pulp and seeds.

    Line up your shaker, jigger, crushed ice, all the rums and syrups side by side so you can work quickly and precisely.

Mixing the Cocktail

    To make the Zombie cocktail, add the white rum, golden rum and dark rum to a shaker with ice, along with the lime, grapefruit and pineapple juice.

    Add the passion fruit juice, cane syrup, grenadine and a few dashes of Angostura bitters for depth of flavour and an aromatic layer.

    Seal the shaker tightly and shake vigorously for about 10 to 15 seconds until the outside is ice-cold and frosted.

Serving

    Fill the chilled glasses to the brim with crushed ice so the cocktail stays ice-cold throughout and the flavours gradually unfold.

    Strain the contents of the shaker through a strainer into the prepared glasses, dividing evenly between both servings.

    Carefully float the overproof rum on top to create a stronger upper layer, and add a dash of absinthe for the signature anise note.

    Garnish with a pineapple slice, a cocktail cherry and a sprig of fresh mint, add a straw and serve immediately.

More tips:

The Zombie is a very strong cocktail thanks to the combination of three rums and overproof rum. Classically, no more than two are served per person per evening at a bar.

If you don't have fresh passion fruit juice, use a good-quality passion fruit puree or syrup. Avoid sweet nectars, which will throw off the cocktail's flavour balance.
