    Gently tap the lime before juicing, cut it in half, and gently squeeze the pulp to release the juice. Use a citrus juicer, and for a cleaner juice, strain it through a fine sieve if desired.

    Prepare the garnish: slice 4 thin rounds from the lime and prepare 4 sprigs of mint.

Cooking

    Place ice cubes in a shaker and add dark rum, orange curaçao liqueur, orgeat almond syrup, simple syrup, and lime juice.

    Shake vigorously for about 10-12 seconds to chill the mixture well and slightly dilute it.

    Fill the glasses with fresh ice and strain the cocktail through a fine sieve into the glasses to ensure the drink is clear and free of small ice particles.

Serving

    Garnish each glass with a sprig of mint and a slice of lime, and serve immediately. If needed, adjust the balance with a drop of simple syrup or lime juice.

More tips:

Use quality dark Jamaican rum and real orgeat almond syrup. A richer simple syrup (e.g., demerara 2:1) will add body and depth of flavor.
