Squeeze fresh lime juice and strain it through a fine sieve. You need 120 ml. Cut 4 thin lime slices and prepare 4 mint sprigs for garnish.

Place ice cubes in a shaker and add dark rum, orange curaçao liqueur, almond orgeat syrup, simple syrup, and lime juice.

Shake vigorously for 10-12 seconds to chill the cocktail well and dilute it slightly.

Fill the glasses with fresh ice and strain the cocktail through a fine sieve into the glasses. The drink will be clear and free of ice shards.
Serving

Garnish each glass with a mint sprig and a lime slice, then serve immediately. Adjust the balance with a drop of simple syrup or lime juice if needed.
More tips:
Use quality dark Jamaican rum and real almond orgeat syrup. A richer simple syrup (e.g. demerara 2:1) will add body and depth of flavor.
Always make the cocktail just before serving. Firm ice in the shaker is key - soft ice melts too quickly and dilutes the drink before you strain it.
