Pineapple Smoothie With Ginger and Lime

For the pineapple smoothie, cut fresh or frozen pineapple into smaller cubes and slice a peeled banana into rounds. With fresh fruit, trim away the hard core. You do not need to thaw frozen fruit, the drink will then be pleasantly icy and you will not need to add as much ice.

Peel the ginger and grate it finely or chop it into really small pieces so it breaks down well in the blender and no unpleasant fibers stay in the drink. Use only a small piece, as its flavor is strong and quickly overpowers the fruit.
TIP:Peel ginger using the edge of a spoon instead of a knife, it’s a safer and gentler way to remove the thin skin without losing any flesh. This method also works for other delicate roots.
Blending

Put the pineapple, banana and ginger into the blender. Pour in the coconut water and add freshly squeezed lime juice, which brightens the flavor nicely and balances the sweetness of the fruit.

Blend for 30 to 60 seconds until smooth, until all the fruit pieces disappear and a silky, creamy drink forms. If the mixture is too thick, pour in a little more coconut water and blend briefly.
Serving

Pour the finished drink into two tall glasses, add ice to taste and garnish with a sprig of fresh mint, which adds aroma and a fresh color.
TIP:Add ice gradually while blending, and pulse briefly until the mixture reaches a smooth, creamy texture with no lumps. Start with a few ice cubes and add more as needed until the desired consistency is reached.

Serve right away, well chilled, while the drink is nicely foamy and tastes its freshest. If it thickens after a while, just stir it again briefly with a spoon or a straw.
More tips:
Instead of coconut water you can use plain water or plant milk. With water the drink will be lighter and fresher, while with milk it will be creamier and richer.
Add the ginger gradually and taste as you go. A smaller amount only warms the drink gently, while a larger one gives it a distinctly spicy note.
