This carrot ginger smoothie lights up your morning with a deep orange color and a flavor even a veggie skeptic will reach for. Sweet carrot and banana team up with juicy orange, sharp fresh ginger, and a pinch of turmeric. Every sip is a load of beta-carotene and vitamin C, so your immune system gets exactly what it needs. Step by step process

Prep the ingredients

    For this smoothie, first wash the carrots, peel them, and slice them into thin rounds so the blender has an easier job.

    Peel the oranges, separate them into segments, and remove the white pith and seeds. Peel the banana and break it into pieces.

    Cut a roughly fifteen-gram piece from the ginger root, peel it, and grate it finely or slice it into thin pieces.

    TIP: 

    Peel ginger using the edge of a spoon instead of a knife, it’s a safer and gentler way to remove the thin skin without losing any flesh. This method also works for other delicate roots.

Blend and serve

    Put the carrots, orange, banana, and ginger into the blender. Add a pinch of turmeric and pour in the chilled coconut water.

    Blend on high speed for two to three minutes, until you get a completely smooth and deep orange drink with no chunks.

    TIP: 

    For a creamy smoothie texture, replace part of the water with plant-based milk (almond or oat milk) and blend until smooth. Add the liquid gradually until you reach the desired thickness.

    Season with a tablespoon of lemon juice, blend briefly, and pour into chilled glasses. Serve right away, while the drink is fresh and full of vitamins.

More tips:

If you like your smoothie really cold, drop a few ice cubes into the blender or use a frozen banana.

Add the ginger gradually and keep tasting as you go. Its sharpness develops quickly in the drink, and less is sometimes more.
