Preparing the ingredients

Peel the red beetroot and cut it into smaller pieces (about 1-2 cm) so it blends easily. If using pre-cooked beetroot, cut it into smaller chunks.
TIP:Place the beet on a flat, stable surface. Before slicing, hold it firmly on the cutting board and slice with a sharp knife in a smooth motion. To ensure a stable cut, trim the bottom end so it sits flat.

Wash the apples, remove the cores, and cut into pieces. You don't have to peel them, as the skin adds fiber.
TIP:To prevent browning after cutting, brush the cut surfaces of the apples with lemon juice, or briefly dip them in water with citric acid. Citric acid helps keep them looking fresh.

Peel the carrots and cut into smaller batons or rounds. If the carrots are thicker, cut them into smaller pieces for easier blending.

Peel the ginger and grate finely or chop into very small pieces. Add a stronger piece of ginger gradually and to taste.
Blending the smoothie

Place the chopped beetroot, apples, carrots, and grated ginger into the blender. Add lemon juice and 200-300 ml water (adjust the amount according to desired consistency).

Blend on high for 1-2 minutes or until completely smooth. Stop the blender and scrape down the sides with a spatula if needed, then blend again.
TIP:Whisk the eggs, then gradually add the yogurt and oil while whisking thoroughly. If the ingredients don't combine smoothly, slow down the addition or gently warm the eggs.

If necessary, add more water for a thinner consistency or a few ice cubes to chill. Alternatively, strain the smoothie through a fine sieve for an extra-smooth texture.
Serving

Divide the smoothie into 4 glasses and serve immediately. If the smoothie is too thick, top it up with a little water when serving.

Garnish as desired with an apple slice, a lemon wheel, or a sprig of fresh mint.
More tips:
For an even fresher smoothie, use chilled ingredients before blending or add a few ice cubes.
Store any leftover smoothie in the fridge in a glass bottle for up to 24 hours. Shake the bottle well before serving.
