Preparation

For savory lassi, measure out 600 ml of plain yogurt and 300 ml of cold water into a bowl or pitcher. Chill the glasses in the refrigerator beforehand so the drink stays cold longer.

Prepare 0.5 teaspoon of salt and 1 teaspoon of ground cumin. If you have whole seeds, dry-toast them in a pan for 1-2 minutes then grind in a mortar - they will release a more pronounced aroma. Keep the ice in the freezer until serving.
Blending

Place the yogurt, water, salt, and ground cumin in a blender. Make sure the ingredients are evenly distributed in the container for a smooth blend.

Blend for 30-45 seconds on medium speed until the consistency is smooth and slightly frothy. Foam on the surface is the hallmark of properly made lassi. Adjust with salt or add a little more water for a thinner consistency.
Serving

Place 2-3 ice cubes (optional) in each glass and carefully pour in the prepared lassi. Serve the drink immediately after making it - it tastes best fresh and well chilled.

Lightly dust the surface of the lassi with a pinch of ground cumin for visual appeal and a more intense aroma. Serve as an accompaniment to Indian dishes or as a refreshment on a hot day.
More tips:
If you have whole cumin seeds, briefly dry-roast and grind them. The lassi will have a more pronounced nutty aroma.
For a thicker version, use Greek yogurt and dilute with less water. For a lighter version, increase the amount of water.
