Hummus with cumin

Jakub SýkoraVegetableLebanese Cuisine0 x se líbilo
Hummus with cumin builds on a toasted spice that gives the chickpea dip a warm, nutty aroma. You toast the cumin briefly in a dry pan so its aroma opens up fully. The creamy tahini and lemon base stays mild, with the cumin just warming it through. Ready with no cooking in fifteen minutes.

Hummus with cumin

Ingredients

4portions
Hummus
To garnish

Step by step process

Preparation

  1. 1

For hummus with cumin, drain the chickpeas from the can and rinse them in a sieve under running water.

  2. 2

Toast the cumin in a dry pan until fragrant, then crush it coarsely in a mortar.

  3. 3

Peel and press the garlic cloves and squeeze the juice from the lemon.

Blending

  1. 4

Put the chickpeas, tahini, pressed garlic and lemon juice into a blender and blend into a thick mass.

  2. 5

While blending, add ice-cold water and olive oil a spoonful at a time until the mixture turns creamy and fluffy.

    TIP:

While blending, add ice-cold water in small increments. Cold water will help emulsify and preserve a fresh flavor, yielding a smooth, silky paste.

  3. 6

Stir in most of the toasted cumin and the salt, blend briefly again and taste.

Serving

  1. 7

Spread the finished hummus into a bowl, sprinkle with the remaining toasted cumin and ground sweet paprika, drizzle with olive oil and garnish with parsley.

More tips:

Toast the cumin only until fragrant, burnt cumin turns bitter.

Crush the cumin right before using so the aroma stays stronger.
