Homemade hummus from chickpeas, tahini and lemon comes together in fifteen minutes with no cooking. Just blend everything until smooth, ice-cold water makes the dip light and fluffy. It tastes best with warm pita and a spoonful of olive oil on top. Adjust the acidity and salt to your liking.

Step by step process

Preparation

    For homemade hummus, drain the chickpeas from the can and rinse them in a sieve under running water.

    Peel and press the garlic cloves, squeeze the juice from the lemon, and for a smoother result gently rub off and discard the chickpea skins.

Blending

    Put the chickpeas, tahini, pressed garlic and lemon juice into a blender and blend into a thick mass.

    While blending, add ice-cold water and olive oil a spoonful at a time until the mixture turns creamy and fluffy.

    TIP: 

    While blending, add ice-cold water in small increments. Cold water will help emulsify and preserve a fresh flavor, yielding a smooth, silky paste.

    Stir in the ground cumin and salt, blend briefly again and taste.

Serving

    Spread the finished hummus into a bowl, make a swirl with the back of a spoon, drizzle with olive oil and sprinkle with ground sweet paprika and chopped parsley.

More tips:

Remove the skins from canned chickpeas and the hummus will be noticeably smoother and silkier.

Stir the tahini well before blending, the oil tends to settle in it.
