Making the batter

Heat the oven to 180 °C and line the muffin pan for the savory muffins with paper liners.

Mix the flour with salt and baking powder in a bowl. In a second bowl, whisk the eggs with the milk and oil until smooth.

Pour the wet mixture into the flour and stir briefly with a wooden spoon. The batter should stay lumpy, so do not mix it smooth or the muffins will turn out tough.
Filling and baking

Cut the ham into small cubes and stir it into the batter along with the grated cheese and chopped chives.

Divide the batter among 12 cups, fill them about three-quarters full and sprinkle the remaining cheese on top.

Bake for 25 minutes, until the muffins are golden and a skewer inserted in the center comes out clean. Then let them rest for 5 minutes and serve warm.
More tips:
Choose a flavorful, well-melting cheese, such as aged edam or cheddar. You can also add a spoon of mustard or chopped scallions to the batter for a bolder taste.
