Cut the cooked ham into small cubes and crack the eggs into a larger bowl so that the mixture can easily and evenly combine later.

Add milk to the eggs, season with salt and pepper, and whisk everything briefly with a whisk until smooth and slightly frothy.
TIP:Beat the eggs for the omelet only briefly, just until the whites and yolks are combined and the mixture is lightly aerated. Add only a small amount of milk or cream so the omelet does not become watery. Salt it only right before frying.

In a non-stick pan, heat a little butter, add a quarter of the ham, and let it sauté for about half a minute over medium heat until fragrant.

Pour in a quarter of the egg mixture, tilt the pan slightly for even distribution, and cook the omelet for about 2 minutes without browning it too much.
TIP:Cook the omelet over medium to low heat, not over high heat. After pouring in the egg mixture, gently swirl the pan so the eggs spread into a thin layer. As soon as the surface is almost set, cook it only briefly so it stays tender and soft.

Once the surface is almost set, carefully fold the omelet in half and cook for another 30 seconds to keep it soft.

Prepare the remaining three omelets in the same way, adding a little more butter to the pan before each new batch.
Serving

Immediately divide the finished omelets onto plates, sprinkle with finely chopped chives, and serve while still warm, as they are at their fluffiest.
More tips:
If you want the omelet to be really soft, lower the heat when the surface is still slightly creamy.
Do not cook the ham for too long to prevent it from becoming tough and to keep it juicy in the finished omelet.
