The eggs set on the pan into a tender layer, diced ham adds a salty depth and grated cheese binds the whole thing together. Prepare the mixture

    For the ham and cheese omelet, crack the eggs into a bowl and whisk them smooth with a whisk. Season with salt and pepper and set aside.

    TIP: 

    Beat the eggs for the omelet only briefly, just until the whites and yolks are combined and the mixture is lightly aerated. Add only a small amount of milk or cream so the omelet does not become watery. Salt it only right before frying.

    Cut the ham into small cubes and grate the cheese coarsely. Keep both next to the stove so they are within reach.

Frying and folding

    Melt a knob of butter in the pan over medium heat until it lightly foams. Pour in the beaten eggs and tilt the pan to spread them into an even layer.

    TIP: 

    Cook the omelet over medium to low heat, not over high heat. After pouring in the egg mixture, gently swirl the pan so the eggs spread into a thin layer. As soon as the surface is almost set, cook it only briefly so it stays tender and soft.

    Once the bottom starts to set and the surface is still slightly moist, scatter the diced ham and grated cheese over one half.

    Let the cheese soften for about 1 minute, then fold it over the filling in half with a spatula. Fry for another 30 seconds and slide it onto a plate. Serve warm.

More tips:

Whisk the eggs just until combined, not until foamy. An over-beaten mixture makes the result firmer and less tender.

Keep the pan over medium heat. Over too high heat the eggs brown on the bottom before the cheese melts inside.
