A golden cheese crust crackles under your fork, and beneath it hide buttery-soft cauliflower florets in cream. This baked cauliflower cheese stands on just three ingredients, while salt, pepper, and a pinch of nutmeg only underline their flavor. The florets are first parboiled in salted water so they just pick up color in the oven instead of turning to mush. Cream wraps them in a silky sauce and grated cheese bakes to a golden top. It reaches the table in under half an hour and satisfies as a full dinner or a hearty side.

Step by step process

Parboiling the Cauliflower

    Start with clean florets. Remove the leaves, cut out the core, and break the head into evenly sized florets so they cook through at the same rate.

    Bring salted water to a boil in a large pot. Add the florets and cook for 5 minutes, just until they soften to the bite but not all the way through. Drain them in a colander and let them dry off, as excess water would thin out the sauce.

    TIP: 

    Add enough salt to boiling water so that it tastes slightly salty. This will enhance the flavor of dumplings, pasta, and vegetables, resulting in a better outcome.

Adding the Cream and Baking

    Preheat the oven to 200 °C. Arrange the drained florets in a greased baking dish so they sit in a single layer without overlapping.

    Season the cream with salt and pepper and grate the nutmeg finely into it. Stir it and pour evenly over the florets, letting it settle between them.

    Grate the cheese coarsely and scatter it over the whole surface. Put the dish in the oven and bake for 20 to 25 minutes, until the cheese turns golden and forms a crisp crust.

    Let the finished dish rest for 5 minutes so the cream thickens and scoops up neatly. Serve straight from the dish as a filling dinner or a side with meat.

More tips:

Pierce the florets with the tip of a knife before draining. They should give slight resistance, since they will soften further as they finish baking in the oven.

Want a bolder crust? Switch the oven to grill for the last 2 minutes and watch the cheese so it does not burn.
