Baked Potatoes With Bacon and Cheese

Bacon crisps up in the oven and its fat soaks into the thin potato slices, which are then capped with a golden layer of melted cheese. Baked potatoes this way come together from just three ingredients and a single dish, with no cream or onion. The slices go in raw, so there is no par-boiling and no extra washing up. Set the dish in the middle of the table and serve straight from it, while the cheese still pulls into strings.

Step by step process

Preparation

    For baked potatoes, peel the tubers and slice them into thin rounds about 2 to 3 mm thick, ideally on a mandoline. The thinner the slice, the faster it softens in the oven.

    Cut the bacon into short strips and heat the oven to 200 degrees. Rub the baking dish with a piece of bacon or a pinch of fat so the slices do not stick.

    Coarsely grate the cheese and set it aside. Keep half for the layers inside and the other half for the top crust.

    Arrange the first layer of slices in the dish so they slightly overlap. Season with salt and pepper, scatter over some of the bacon strips and sprinkle with a handful of cheese. Repeat until the ingredients run out.

    Top with the remaining cheese and put the dish in the preheated oven. Bake for 40 to 50 minutes, until the slices soften and the cheese joins into a golden crust. The tip of a knife should slide through them without resistance.

    TIP: 

    Spread the potatoes on a baking sheet in a single layer, leaving a little space between them. If they are crowded, they will steam instead of roast. Place them cut side down so that side gets the crispiest.

    Let the bake rest for 5 minutes so the layers hold together. Serve straight from the dish, ideally with a light leafy salad.

More tips:

Slice them as thin and even as possible so they bake through evenly.

Instead of edam, use any cheese that melts well, such as gouda or emmental.
