Microwave Baked Potato

When you don't want to wait an hour for a potato to bake in the oven, reach for the microwave instead. A microwave baked potato is ready in a quarter of an hour: just prick it, let it soften, and split it open. The hot flesh gets butter, a spoon of sour cream, a handful of chives, and grated cheese. The result is a filling dinner or a hearty snack you can pull off even on a weeknight after work.

Step by step process

Prep and microwave

    Take 2 large potatoes for the microwave baked potato, wash them, pat them dry, and prick the skin several times with a fork so steam can escape and they don't burst.

    Set them on a plate and put them in the microwave. Heat on full power for 5 minutes, then turn them over and continue for another 5 to 7 minutes, until they are soft all the way through.

    Check the softness with the tip of a knife. It should slide through the flesh without resistance. If the center is still firm, add one minute at a time until it gives way.

Finishing and serving

    Let the baked potato rest for a minute, then cut it crosswise down the length and squeeze the ends gently so the flesh lifts and releases steam.

    Add butter to the warm flesh and let it melt. Stir in the sour cream, then season with salt and pepper.

    TIP: 

    Melt butter over low heat or in a water bath and stir frequently to prevent burning and bitterness. This method is ideal for preparing sauces, toppings, and baking.

    Scatter grated cheese on top and finish with chopped chives. Serve right away, while the cheese is still warm and starting to melt.

More tips:

Choose potatoes of a similar size so they cook evenly. If you bake only one, cut the time roughly in half.
