Chocolate Mug Cake From the Microwave

This mug cake comes together right in the mug. After a couple of minutes in the microwave you pull out a warm chocolate dessert. Cocoa and dark chocolate give the batter a deep color and a moist crumb that stays slightly gooey in the center. A single sweet portion in one mug works well for late-night snacking, when you do not want to heat the oven. You can shift the flavor with milk or white chocolate, or press a spoonful of peanut butter into the center. The whole thing takes about five minutes, including washing the single mug.

Step by step process

Mixing the Batter

    For the mug cake, pour the flour, sugar, cocoa, baking powder, and a pinch of salt into a large mug. Mix the dry ingredients well with a fork so the cocoa spreads evenly and no pockets of flour remain.

    Pour in the milk and oil, then add the vanilla extract. Stir until the batter is glossy and smooth, with no dry lumps at the bottom. Do not overmix, or it will turn tough.

    Break half of the chocolate into small pieces and stir them into the batter. Set the other half aside to sprinkle on top.

Baking in the Microwave

    Spread the batter over the bottom of the mug and level the surface. Keep it below two thirds of the height, because it rises a lot and would otherwise overflow.

    Put the mug in the microwave and cook at full power of 700 watts for about 90 seconds. The cake is done when it climbs to the rim and the surface feels dry and springy.

    Let the cake rest for 1 minute. Sprinkle it with the remaining chocolate, which melts from the heat, and serve it warm straight in the mug.

More tips:

Microwaves vary in power, so after 70 seconds check on it and keep baking in 10-second bursts so the crumb does not dry out.

Instead of dark chocolate, use milk chocolate and in that case cut back by one tablespoon of sugar.
