Cut the avocados in half lengthwise, remove the pits, peel them, and place the flesh in a blender.

Measure out the cocoa powder, maple syrup, vanilla extract, and almond milk so you can blend everything smoothly without interruption.

Wash and dry raspberries for decoration and prepare dark chocolate in fine shavings or small pieces.
Blending

Add the cocoa powder, maple syrup, vanilla extract, and almond milk to the avocado in the blender and blend until smooth for 30-60 seconds.

Taste, add a pinch of salt to enhance the flavor, and adjust sweetness with more maple syrup or consistency with a little extra almond milk if needed.

Use a spatula to scrape the sides of the container and blend briefly again until the mousse is exceptionally smooth and airy with no lumps.
TIP:During blending, regularly stop the blender and use a spatula to scrape the remnants from the walls back to the center, ensuring all ingredients are well mixed and the mixture is smooth and fluffy.
Serving

Divide the mousse into four glasses or bowls and, if desired, chill for 15-20 minutes for a firmer texture.

Before serving, top with raspberries and sprinkle with dark chocolate shavings. serve chilled.
