Clean the pork tenderloin (remove any silverskin) and cut into evenly sized cubes about 2.5 cm so they cook uniformly.

In a bowl, combine olive oil, lemon juice, dried oregano, pressed garlic, salt, and ground black pepper. Pour the marinade over the chopped meat, mix well so all pieces are coated, and gently massage the marinade into the meat. Cover and let marinate in the refrigerator for at least 30 minutes, ideally 2 hours for fuller flavor.
TIP:Whisk the eggs, then gradually add the yogurt and oil while whisking thoroughly. If the ingredients don't combine smoothly, slow down the addition or gently warm the eggs.

If using wooden skewers, soak them in cold water for at least 30 minutes to prevent burning while grilling.

Grilling

Thread the marinated meat onto the skewers, leaving a small gap between pieces to allow heat circulation and even cooking.

Preheat a grill pan or grill to medium-high heat (approx. 200-220 °C) and brush the grate or pan with a thin layer of olive oil to prevent sticking.
TIP:Before grilling, brush the grill grate with a thin layer of oil, and during grilling occasionally brush it with oil to prevent the meat from sticking and to help form a crispy crust.

Cook the skewers on all sides, turning them every 2-3 minutes, about 12-15 minutes total, until the meat is evenly browned and the juices run clear. Watch the heat to avoid burning the outside while drying out the inside.

After cooking, let the skewers rest briefly for 3-5 minutes before serving to allow the juices to settle.

Serve the finished souvlaki immediately, season to taste with salt and pepper, and drizzle with fresh lemon juice.

More tips:
You can use chicken breasts or pork shoulder instead of pork tenderloin, depending on your preference.
