Moroccan lamb kefta skewers

Moroccan lamb kefta are juicy grilled skewers of ground meat, a beloved street food across Morocco and North Africa. The meat is seasoned with cumin, paprika, cinnamon and fresh parsley, rested briefly and shaped onto wooden skewers. It is grilled hard until the surface chars while the inside stays juicy. Serve with spicy harissa, fresh mint and warm flatbread.

Step by step process

Preparing the meat mixture

    For the Moroccan kefta, grate the onion finely and press or finely mince the garlic.

    In a bowl, mix the ground lamb with the grated onion, garlic and chopped parsley. Add the ground cumin, paprika, coriander, cinnamon, salt and pepper.

    Thoroughly knead the mixture by hand for 2 to 3 minutes until it is compact. Cover and rest it in the fridge for 20 minutes, the spices will deepen and the meat will shape better.

Shaping and grilling

    With damp hands, shape the mixture into rolls about 10 to 12 cm long and thread them firmly onto soaked wooden skewers. The batch makes 4 large skewers.

    Preheat the grill pan or grill to high heat. Brush the surface with olive oil and grill the skewers for 3 to 4 minutes per side until evenly cooked and lightly charred.

    Let the finished skewers rest for 2 minutes. Serve with spicy harissa and fresh mint.

More tips:

Rest the meat in the fridge before grilling, the skewers then hold their shape.

Soak the skewers in water 30 minutes ahead so they do not burn on the grill.
