Moroccan fried potato patties maakouda

Maakouda are traditional Moroccan potato patties fragrant with garlic, cumin and turmeric. Boiled potatoes are mashed to a smooth paste, seasoned with spices and herbs and fried in oil until golden. They are crisp on the outside and soft and moist inside. In Morocco they are served as street food, an appetizer or a side dish for tagine, often with spicy harissa and a slice of lemon.

Step by step process

Preparing the potato mixture

    To make maakouda, boil potatoes in salted water for about 25 minutes until completely tender. Drain and let cool fully. Peel and mash with a fork or potato masher until smooth with no lumps.

    Add eggs, crushed garlic, chopped parsley, ground cumin and turmeric to the mashed potatoes. Season with salt and pepper and mix well. Incorporate the flour, the mixture should be firm enough to shape but not too stiff.

Frying

    Shape the potato mixture into flat round patties about 8 cm in diameter and 1 cm thick. Keep them even.

    Heat oil in a pan to a depth of about 0.5 cm. Fry the patties on each side for 3 to 4 minutes until golden brown. Drain on a paper towel to remove excess oil.

More tips:

Let the potatoes cool completely, warm mash falls apart and soaks up oil.

The oil must be properly hot, or the patties absorb fat and turn out soggy.
