Russian Stuffed Meat Patties with Mushrooms

Preparing the mushroom filling

For the zrazy filling, finely chop the mushrooms and onion. Saute the onion in butter over medium heat until golden, about 3 minutes. Add the mushrooms and cook for 5 to 7 minutes until the water evaporates. Season with salt and pepper and let cool.
Preparing the meat mixture

Finely chop the onion and crush the garlic. In a bowl, combine the minced meat, egg, onion, garlic, breadcrumbs, salt and pepper. Knead thoroughly with your hands until a homogeneous mixture forms.

Cover the meat mixture with cling film and refrigerate for 30 minutes to rest.
Shaping the zrazy

With wet hands, take a portion of the meat mixture (about 80 g) and flatten it into a patty about 1 cm thick. Place a spoonful of mushroom filling in the center.

Fold the edges of the meat patty over the filling and press firmly. Shape the zraza into an oval.
Frying

Place flour in one bowl and beat an egg in another. Coat each zraza first in flour, then in egg.

Heat the oil in a pan over medium-high heat. Fry the zrazy for 4-5 minutes on each side until golden.

Transfer the cooked zrazy to a paper towel to drain excess fat. Serve hot with mashed potatoes or a fresh salad.
More tips:
Press the edges firmly around the filling, or the zrazy will open up while frying.
Let the mushroom filling cool completely, warm filling softens the meat and is hard to shape.
