Spicy Buffalo Chicken Wings

Buffalo chicken wings are a spicy classic for game day. You season the wings, bake them until crisp and toss them in a fiery Buffalo sauce made of chili sauce, butter and garlic. Prep and baking

    For the Buffalo chicken wings, heat the oven to 220 degrees and line a baking sheet with parchment paper.

    Pat the meat dry with a paper towel. Salt it on both sides and season generously with pepper. Then lightly dust it with all-purpose flour mixed with smoked paprika, spreading the coating evenly across the surface with your fingers. That thin, even layer of seasoned flour is the trick that helps the skin crisp up beautifully in the oven while it stays dry rather than steaming.

    Arrange them on the sheet so the pieces don't touch, then drizzle with oil. Bake for 40 to 45 minutes. Flip them once halfway through so they turn golden on every side. The finished meat has crispy skin and juicy meat inside.

Spicy Buffalo sauce

    In a small saucepan, melt the butter over low heat and stir in the pressed garlic. Saute for about 1 minute, until the base smells gently fragrant, but before the garlic turns golden.

More tips:

For an even crispier result, leave the salted wings uncovered in the fridge for an hour before baking, the surface will dry out nicely.

Balance the sauce to your liking: more butter softens it, while a spoonful of vinegar or lime juice adds freshness and a typical tangy edge.
