Piri piri chicken with spicy chilli sauce

Piri piri is a Portuguese classic with African roots, chicken marinated and grilled in a spicy sauce of chilli peppers. A marinade of blended chillies, garlic, lemon, smoked paprika and vinegar gives the meat a sharp, smoky flavor and colors the skin beautifully. The chicken is grilled slowly until the skin is crisp and the meat is cooked to the bone, then brushed with the rest of the sauce. It is served with fries, rice or bread and an extra portion of sauce for dipping.

Step by step process

Preparing the marinade

    Piri piri chicken starts with a fiery marinade. Stem the red chillies and peel three cloves of garlic. Blend them with olive oil, lemon juice, wine vinegar, smoked paprika, oregano and a pinch of salt into a smooth, deep red sauce.

    Rinse and pat dry the chicken thighs. Prick the skin in several places with a fork so the marinade soaks in. Season with salt and pepper and rub thoroughly with half of the sauce. Cover and rest in the fridge for at least two hours, ideally overnight.

Grilling and serving

    Preheat a grill or grill pan to medium-high heat and brush it with oil. Grill the thighs for about ten to twelve minutes per side. The skin should turn golden and crisp and the meat cooked through to the bone (internal temperature at least 75 °C).

    Pour the warmed remaining sauce over the cooked meat and let it rest. Serve with fries, rice or fresh bread, a green salad and a bowl of extra sauce for dipping.

More tips:

Marinate the chicken overnight, chilli and lemon tenderize it and add a sharp kick.

Keep half the sauce for after grilling, the grill heat would scorch it otherwise.
