Jollof rice in a spicy tomato sauce

Preparing the tomato base

Jollof rice begins with a tomato base. Roughly chop the peeled tomatoes, the red pepper and one onion, then blend into a smooth mixture.

In a large pot, heat the sunflower oil over medium heat. Add the remaining chopped onion and the pressed garlic and saute for five minutes until golden. Stir in the tomato paste and fry for two minutes.
Cooking the rice

Pour in the blended tomato mixture and the chicken broth, then add sweet paprika, ground cumin, thyme and a bay leaf. Bring to a boil and cook for ten minutes until the sauce thickens. Season with salt and pepper.

Add the rinsed long-grain rice to the boiling sauce and stir. Cover tightly and reduce the heat to the lowest setting. Cook for 25 to 30 minutes until the rice absorbs all the liquid. Stir it gently every ten minutes.
More tips:
Rinse the rice under cold water before cooking until it runs clear. It stays nicely fluffy.
For a deeper color and flavor, reach for vegetable or palm oil.
