Step by step process

Preparation

    Make sure the Prosecco and sparkling water are well chilled. Prepare four glasses.

    Wash the mint and limes. Slice the limes thinly. Strip the leaves from half the mint sprigs, leaving the remaining sprigs for garnish.

    TIP: 

    Gently bruise the mint leaves against the inside of the carafe until their aroma is released. Do not apply too much pressure, the leaves should not tear. Use a muddler (herb muddler) or a wooden spoon.

Mixing

    Pour the elderflower syrup into a pitcher and add the torn mint leaves. lightly rub them against the side of the pitcher to release their aroma.

    Pour in the chilled Prosecco and sparkling water. Stir gently to avoid losing the bubbles.

Serving

    Fill four glasses with ice (about 4 cubes in each) and add a few lime slices.

  2. 6

    Pour the drink from the pitcher into the glasses. Garnish each glass with a mint sprig and serve immediately.

More tips:

Stir gently and briefly - vigorous stirring will flatten the Prosecco.

If the elderflower syrup is very sweet, reduce its amount and top up with the same amount of sparkling water to make the drink lighter and drier.
