Hugo Spritz with Elderflower Syrup and Prosecco

Preparation

Make the hugo spritz: check that the Prosecco and sparkling water are well chilled, then set out four glasses.

Wash the mint and limes. Slice the limes thinly. Strip the leaves from half the mint sprigs and set the remaining sprigs aside for garnish.
Mixing

Pour the elderflower syrup into a pitcher and add the torn mint leaves. Gently press them against the side of the pitcher to release their aroma.

Pour in the chilled Prosecco and sparkling water. Stir gently to keep the bubbles.
Serving

Fill four glasses with ice (about four cubes each) and add a few lime slices.

Pour the drink from the pitcher into the glasses. Garnish each glass with a mint sprig and serve immediately.
More tips:
Stir gently and briefly - vigorous stirring will flatten the Prosecco.
If the elderflower syrup is very sweet, reduce the amount and top up with the same quantity of sparkling water to make the drink lighter and drier.
