Tommy's Margarita with Agave Syrup

Tommy's Margarita comes together as a modern take on the classic from Tommy's bar, where triple sec is replaced by agave syrup. You moisten the glass rim with lime and coat it in salt, then measure tequila, fresh lime juice, and agave syrup into a shaker. You shake vigorously with ice for 10-12 seconds and strain it into a glass with fresh ice. You garnish with a lime wedge and serve right away.

Preparation

    This Tommy's Margarita is served with a salted rim: pour salt into a shallow dish, moisten the rims of 4 glasses with lime, and dip them in salt. Set the glasses aside.

    Juice approximately 120 ml of fresh lime juice from the limes. For a smoother texture, strain it through a fine mesh sieve.

    TIP: 

    Strain fresh lime juice through a fine sieve to remove pulp and fibers. For an even cleaner result, you can press it through a cheesecloth. The margarita will be smoother and brighter.

Mixing

    Measure the tequila, lime juice, and agave syrup into a shaker. Then add a large handful of ice.

    Shake vigorously for 10-12 seconds, until the mixture is well chilled and slightly diluted.

    Fill the glasses with fresh ice. Strain the cocktail through a fine sieve and divide evenly into 4 glasses. Your cocktail is ready to serve.

    Garnish each glass with a lime wedge and serve immediately.

More tips:

Use 100% agave tequila (blanco is fresher, reposado adds a gentle vanilla note). For a less sweet version, dilute the agave syrup 1:1 with water and adjust the amount to taste.
