Jakub SýkoraPreservesCzech Cuisine x se líbilo
Homemade lemon syrup made from fresh lemons, sugar, and water is a fragrant concentrate with a bold citrus flavor. You can prepare it easily, without any canning, and keep a piece of summer in your pantry. Just dilute it with still or sparkling water for a refreshing homemade lemonade. It also works beautifully in iced tea, cocktails, or drizzled over pancakes. Stored in a sealed sterilized bottle, it keeps for several weeks in the fridge.

Lemon Syrup

Step by step process

Preparing the Lemons

  1. 1

Thoroughly wash the lemons with hot water and dry them with a clean towel to remove any wax from the skin. A clean wax-free peel ensures your lemon syrup develops its full natural aroma.

  2. 2

Finely grate the yellow zest from half of the lemons using a fine grater. Avoid the white pith beneath the skin, which would make the syrup bitter.

  3. 3

Halve all the lemons and squeeze out the juice. Strain the juice through a fine sieve to remove seeds and larger pieces of pulp.

Cooking the Syrup

  1. 4

In a saucepan, combine the water and sugar and bring to a gentle boil, stirring constantly. Cook for about 5 minutes until the sugar is completely dissolved and a clear syrup forms.

  2. 5

Add the grated lemon zest and simmer over low heat for another 5 minutes so the syrup develops its full lemon aroma.

  3. 6

Remove from the heat, pour in the strained lemon juice, and add citric acid to taste to brighten the syrup and extend its shelf life.

  4. 7

Let the syrup bubble gently on the lowest heat for 10 minutes to allow the flavors to meld, but avoid a vigorous boil to preserve the fresh citrus taste.

Bottling and Storage

  1. 8

Thoroughly sterilize jars or bottles with lids using hot water or boiling, then leave them to drain upside down on a clean towel.

  2. 9

Strain the hot syrup through a fine sieve directly into the prepared jars, seal them immediately, and turn them upside down until completely cooled.

  3. 10

Once cooled, store the syrup in a cool place. Keep opened bottles in the refrigerator and use within 4 weeks.

Serving

  1. 11

For homemade lemonade, pour about 2 to 3 tablespoons of syrup into a glass, top up with still or sparkling cold water, and add ice and a lemon slice.

  2. 12

The syrup can also be used in hot tea, cocktails, to flavor desserts, or drizzled over pancakes and crepes.

More tips:

For a more intense lemon flavor, replace some of the water with fresh lemon juice. The syrup will be more aromatic and tart.

For a longer shelf life, add 1 teaspoon of citric acid. The syrup will then keep in the refrigerator for several months without losing its flavor.
