Mimosa with Sparkling Wine and Orange Juice

Preparation

Chill the sparkling wine and flutes in the refrigerator for at least 20 minutes before serving.
TIP:Place the sparkling wine and the glasses in the fridge for at least 20 minutes before serving. The cold will help preserve their flavor and bubbles longer.

Cut the oranges in half and juice them with a citrus juicer into a carafe, if using fresh juice.

Measure the orange juice and sparkling wine at an approximate 1:1 ratio.
Mixing

Pour the orange juice into the chilled flutes first so it mixes better with the sparkling wine's bubbles.

Pour the sparkling wine down the side of the flute. pour slowly so the effervescence lasts as long as possible.
TIP:While pouring sparkling wine, tilt the glass and pour slowly down the inside of the glass so the bubbles last as long as possible. Keep the bottle low over the glass and minimize splashing.
Serving

Garnish the rim of the flute with a thin slice of orange and serve immediately.

Adjust the juice-to-wine ratio in the next glass to taste to suit your guests.
More tips:
Use a dry brut sparkling wine and very well-chilled ingredients. Always add the sparkling wine last so the bubbles last as long as possible.
