Frozen treats you can make without an ice cream maker

When the hot days arrive, most of us reach for something cold. Shop-bought ice cream tends to be full of sugar and additives, and hardly anyone owns an ice cream maker at home. The good news is that you do not need one. A freezer, a blender or popsicle moulds and a few basic ingredients are enough.

We have put together five recipes, from fresh fruit pops to creamy custard-style ice cream. Some take only a few minutes, others just need time in the freezer. They all share one thing: homemade, simple and without any special equipment.

Strawberry yogurt popsicles

A classic that pleases kids and adults alike. Just blend Greek yogurt with strawberries and a spoonful of honey, pour into moulds and let it set. The result is a refreshing pop with real fruit flavour and a creamy texture, free of artificial colours.

The yogurt brings a pleasant tang and protein, the strawberries colour and sweetness. With frozen strawberries you can make them any time of year. The same base bends easily further: try it with blueberries, fresh basil leaves or seasonal rhubarb.

Mango sorbet with no cooking

Sorbet is the simplest route to intense fruit flavour. Blend frozen mango with lime juice and a little sugar and within minutes you have a velvety, bright orange scoop. No cream, no eggs, just fruit.

Lime brightens the taste and balances the sweetness of ripe mango. The sorbet is naturally vegan and gluten-free, so truly everyone can enjoy it. The same technique makes a raspberry sorbet too, adding a pleasant tartness.

One-ingredient banana nice cream

The most magical trick of the whole summer. Slice ripe bananas, freeze them and then blend until smooth. From a single ingredient you get a creamy mass that tastes and feels like real ice cream, yet contains no added sugar or cream.

The secret is a well-ripened banana, which is naturally sweet on its own. You can flavour the finished nice cream with vanilla or a spoonful of peanut butter, and adding cocoa turns it into a chocolate version.

Chocolate fudge popsicles

For chocolate lovers we have a rich version. Simmer milk or coconut milk with good cocoa and a piece of chocolate, pour the mixture into moulds and let it freeze. The result is thick, dark and creamy like real fudge.

A pinch of salt deepens the chocolate flavour even more. If you prefer a gentle caramel flavour, the same method makes salted caramel popsicles too.

No-churn vanilla ice cream

Creamy custard-style ice cream without a single turn of a crank. Whip the cream until stiff, gently fold in sweetened condensed milk with vanilla and let the mixture freeze overnight. The result is fluffy, smooth and free of ice crystals.

This method, known as no-churn, works thanks to the fat in the cream and the sugar in the condensed milk, which prevent it from hardening. Just add cocoa and melted chocolate and you have a chocolate version.

How to make homemade ice cream without crystals

The main enemy of homemade ice cream is ice crystals. They form from water, which builds large crystals during slow freezing. Fat from cream or coconut milk, sugar and a splash of alcohol all help, because they lower the freezing point and keep the mass supple.

For blended versions a powerful blender and well-frozen fruit make the difference. Popsicles release from the mould more easily when you dip them in warm water for a few seconds. And let firm ice cream soften for five minutes at room temperature before scooping.

Summer on a spoon

Homemade frozen treats have the edge because you know exactly what goes into them. From a fresh sorbet to creamy custard-style ice cream, you can choose by mood and by whatever is in your freezer. You do not need an ice cream maker for any of these recipes, just a little patience until everything sets properly.
