Paloma with Grapefruit

Pour sea salt into a shallow dish. Cut one lime in half. Rub the rims of four highball glasses with a lime wedge and dip them in sea salt.
TIP:Moisten the rim with lime juice and dip it in salt spread on a plate. Twist the glass and tilt it slightly until the rim is thin and even. For a nicer look, use fine sea salt.

Halve the grapefruits and juice them using a citrus juicer. Juice the limes into a measuring cup. Strain any pulp through a sieve.
TIP:Bring the grapefruit to room temperature, then juice it with a citrus juicer to maximize yield. Strain the juice through a fine sieve to remove pulp and seeds.
Mixing

Add 5-6 ice cubes to each glass. Divide the tequila, grapefruit, and lime juices evenly between the glasses.

Add agave syrup (adjust the amount to taste) and stir briefly with a bar spoon to dissolve the syrup.

Top up with soda water and gently stir again to combine without losing the carbonation.
Serving

Garnish the rim or the drink with a slice of grapefruit and serve immediately chilled.

If desired, add an extra ice cube or a splash of lime juice for a brighter acidity.
More tips:
No agave syrup? Substitute it with an equal amount of simple syrup (1:1). If your grapefruits are less bitter, reduce the sweetener.
For faster preparation, use 100% grapefruit juice and skip fresh juicing. The drink will be less aromatic but still balanced.
