Chill 4 cocktail glasses in the freezer for at least 5 minutes to help the drink stay cold longer.

Juice the limes using a citrus press and strain the juice through a fine sieve to remove pulp and seeds.
TIP:After squeezing the lime juice, strain it through a fine sieve and, if necessary, through a second sieve or cheesecloth to remove pulp and seeds. The resulting clear juice blends better with the cocktail.
Mixing

Fill a shaker or jar with plenty of ice, then add the white rum, fresh lime juice, and simple syrup.

Shake vigorously for 12-15 seconds, until the shaker is noticeably frosted on the outside and the drink is well chilled.

Strain through a fine strainer into the chilled cocktail glasses to prevent ice shards from entering the drink.
Serving

Garnish each cocktail with a thin lime wheel on the rim and serve immediately, without ice in the glass.
More tips:
Adjust sweetness to taste: for a drier version, reduce the simple syrup to 45 ml. for a sweeter one, increase it up to 75 ml.
